  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/4 cup white wine

  • 4 cups chicken broth
  • 1/2 cup grated Parmesan cheese

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the white wine, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes to reduce the sauce slightly.
  • While the sauce is simmering, in a separate pot, bring the chicken broth to a simmer. In another large pot, melt the butter over medium heat. Add the Arborio rice and cook for 1-2 minutes, stirring constantly.
  • Add a ladleful of the hot chicken broth to the rice and stir until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly, until the rice is creamy and tender, about 20 minutes.
  • Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  • Return the cooked shrimp to the skillet with the lemon garlic sauce and toss to coat.
  • To serve, spoon the creamy Parmesan risotto onto plates and top with the lemon garlic shrimp. Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
