Ingredients
- 1 pound of asparagus, trimmed
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of grated parmesan cheese
Instructions
- Preheat the oven to 425°F (220°C).
- Place the trimmed asparagus on a baking sheet and drizzle with 2 tablespoons of olive oil. Toss to coat evenly.
- Sprinkle the minced garlic over the asparagus, then drizzle with the juice of 1 lemon and sprinkle with the lemon zest.
- Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper, then toss to coat the asparagus evenly with the seasonings.
- Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender-crisp.
- Remove the asparagus from the oven and sprinkle with 1/4 cup of grated parmesan cheese while still hot.
- Serve immediately and enjoy!
