Ingredients
- 8 oz of pasta
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 teaspoon of red pepper flakes
- 1/2 cup of chicken broth
- 1/4 cup of fresh lemon juice
- Zest of 1 lemon
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus, garlic, and red pepper flakes. Cook for 3-4 minutes, or until the asparagus is tender-crisp.
- Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes.
- Add the cooked pasta and chicken back into the skillet. Toss everything together until well combined and heated through.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot. Enjoy!
