Instructions

  • Preheat the oven to 350°F (175°C).
  • In a food processor, combine 1 1/2 cups of flour, 1/2 cup confectioners' sugar, and 1/4 teaspoon of salt. Pulse a few times to mix.
  • Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Place the pan on a baking sheet and bake for 15-20 minutes, or until the crust is golden brown. Remove from the oven and set aside to cool.
  • In a large bowl, whisk together 3 eggs, 1 cup granulated sugar, lemon juice, and lemon zest until well combined.
  • Pour the lemon mixture into the cooled crust and scatter the blueberries on top.
  • Bake for 25-30 minutes, or until the filling is set and the edges are golden brown.
  • Allow the tart to cool completely in the pan on a wire rack. Once cooled, remove the tart from the pan and dust with 2 tablespoons of confectioners' sugar before serving.
  • Slice and serve the lemon blueberry tart, and enjoy!
