Ingredients
- 1 kielbasa sausage, sliced
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 tablespoons olive oil
- 4 slices of bread
- 4 slices of cheese
- 1/4 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced kielbasa sausage to the skillet and cook for 3-4 minutes, or until browned. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced onion and bell pepper until they are tender and slightly caramelized, about 5-6 minutes. Season with salt and pepper to taste.
- In a small bowl, mix the mayonnaise and Dijon mustard together to create a spread for the sandwich.
- To assemble the sandwiches, spread the mayonnaise and Dijon mixture on one side of each slice of bread. Place a slice of cheese on the other side of each slice of bread.
- Divide the cooked kielbasa, onion, and bell pepper mixture evenly between two slices of bread. Top with the cheese-covered slices of bread to form sandwiches.
- Return the sandwiches to the skillet and cook over medium heat for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
