Ingredients
- 8 oz of pasta
- 3 cups of kale, stems removed
- 1/2 cup of walnuts
- 2 cloves of garlic
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of olive oil
- Salt and pepper to taste
Instructions
- Cook 8 oz of pasta according to package instructions. Drain and set aside.
- In a food processor, combine 3 cups of kale, 1/2 cup of walnuts, 2 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly drizzle in 1/2 cup of olive oil until the mixture is smooth and well combined. Season with salt and pepper to taste.
- In a large mixing bowl, toss the cooked pasta with the kale walnut pesto until evenly coated.
- Serve the kale walnut pesto pasta in individual bowls, garnish with additional Parmesan cheese and walnuts if desired, and enjoy!
