Ingredients
- 8 ounces sweet potato noodles
- 1/2 pound beef, thinly sliced
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 4 green onions, cut into 2-inch pieces
- 1/2 cup spinach
- 2 tablespoons vegetable oil, for cooking
- Toasted sesame seeds, for garnish
Instructions
- Boil a pot of water and cook the sweet potato noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a bowl, mix 1/4 cup soy sauce, 2 tablespoons sugar, 2 tablespoons sesame oil, and minced garlic. Add the thinly sliced beef and marinate for 10-15 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the marinated beef and cook until browned. Remove from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil. Stir-fry the onion, carrot, and red bell pepper until they start to soften. Add the spinach and green onions, and continue to stir-fry for another 2-3 minutes.
- Add the cooked sweet potato noodles and the cooked beef to the pan. Pour any remaining marinade over the noodles and vegetables. Stir-fry for an additional 2-3 minutes, until everything is well combined and heated through.
- Transfer the Japchae to a serving dish and garnish with toasted sesame seeds. Serve hot and enjoy!
