Irish Stew

Ingredients
- 2 pounds of lamb shoulder, cut into chunks
- 3 tablespoons of vegetable oil
- 4 large potatoes, peeled and diced
- 2 onions, chopped
- 4 carrots, sliced
- 2 stalks of celery, chopped
- 4 cups of beef broth
- 2 tablespoons of tomato paste
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the pot and sauté the onions, carrots, and celery until they begin to soften.
- Stir in the tomato paste, thyme, and rosemary, and cook for another 2 minutes.
- Return the lamb to the pot and add the diced potatoes and beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender and the potatoes are cooked through.
- Taste and adjust seasoning if necessary.
- Serve hot and enjoy!
