Instructions

  • In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat.
  • Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the pot and sauté the onions, carrots, and celery until they begin to soften.
  • Stir in the tomato paste, thyme, and rosemary, and cook for another 2 minutes.
  • Return the lamb to the pot and add the diced potatoes and beef broth. Season with salt and pepper.
  • Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender and the potatoes are cooked through.
  • Taste and adjust seasoning if necessary.
