Instructions

  • In a small bowl, whisk together 1/2 cup honey and 1/4 cup Dijon mustard to make the glaze.
  • Season the chicken breasts with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through.
  • Pour the honey mustard glaze over the cooked chicken breasts, reduce the heat to low, and let the glaze simmer for 2-3 minutes, coating the chicken evenly. Remove from heat and set aside.
  • In a medium saucepan, bring 2 cups of chicken broth to a boil. Add 1 cup of quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
