Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried dill
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon zest
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup honey, 1 tablespoon olive oil, 1 tablespoon lemon juice, minced garlic, dried dill, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the honey glaze over the salmon.
- Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.
- In another small bowl, mix together mayonnaise, chopped dill, lemon zest, 1 tablespoon lemon juice, and salt to taste to make the lemon dill aioli.
- In a large bowl, toss the mixed vegetables with 1 tablespoon olive oil, balsamic vinegar, salt, and pepper. Spread the vegetables on a separate baking sheet.
- Roast the vegetables in the oven for 15-20 minutes, or until they are tender and slightly caramelized.
- Once the salmon and vegetables are cooked, serve the salmon with a dollop of lemon dill aioli on top, and the roasted vegetables on the side. Garnish with chopped fresh parsley.
