Honey Garlic Tofu with Vegetables

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of cornstarch
- 2 tablespoons of vegetable oil
- 1 cup of broccoli florets
- 1 bell pepper, sliced
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1/4 cup of soy sauce
- 3 tablespoons of honey
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 1 tablespoon of water
- 1 teaspoon of cornstarch dissolved in 1 tablespoon of water
- Sesame seeds and green onions for garnish
Instructions
- In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the broccoli, bell pepper, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and 1 tablespoon of water. Pour the sauce into the skillet with the vegetables.
- Add the crispy tofu back into the skillet and toss to coat everything in the sauce.
- Stir in the dissolved cornstarch and water mixture to thicken the sauce. Cook for an additional 1-2 minutes until the sauce has thickened.
- Garnish with sesame seeds and sliced green onions before serving.
- Serve the honey garlic tofu and vegetables over steamed rice or noodles. Enjoy!
