  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, sliced
  • Cooked rice, for serving

  • 1 green bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, sliced
  • Cooked rice, for serving

Instructions

  • In a small bowl, toss the chicken pieces with 2 tablespoons of cornstarch until evenly coated.
  • In another bowl, whisk together 1/4 cup of soy sauce, 1/4 cup of honey, 3 cloves of minced garlic, 1 teaspoon of grated fresh ginger, and 1/4 teaspoon of red pepper flakes to make the sauce.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook until golden and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and green bell peppers, and snap peas. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
  • Return the cooked chicken to the skillet. Pour the honey garlic sauce over the chicken and vegetables. Stir-fry for an additional 2-3 minutes until everything is heated through and coated in the sauce.
  • Sprinkle with sliced green onions and serve the honey garlic chicken stir-fry over cooked rice.
