Ingredients
- 4 bone-in, skin-on chicken thighs
- 1/4 cup balsamic vinegar
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 1/4 cup honey, 2 cloves minced garlic, 1 tablespoon olive oil, 1 teaspoon dried thyme, and salt and pepper to taste.
- Place the chicken thighs in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Reserve the marinade for later.
- Place the chicken skin side down in the skillet and cook for 5-6 minutes, until the skin is golden brown and crispy. Flip the chicken thighs and cook for an additional 2 minutes.
- Pour the reserved marinade into the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley and serve hot. Enjoy!
