Ingredients
- 4 large potatoes, diced into 1/2 inch cubes
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside. Remove the potatoes from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the diced bell peppers and onions for 5-7 minutes, or until they are softened and slightly caramelized.
- Return the cooked potatoes to the skillet with the bell peppers and onions. Sprinkle with paprika, garlic powder, and onion powder. Season with salt and pepper to taste. Stir to combine all the ingredients and cook for an additional 3-5 minutes to allow the flavors to meld together.
- Garnish with chopped fresh parsley, if desired, and serve hot as a delicious side dish for breakfast or brunch.
