Instructions

  • Preheat the oven to 325°F (165°C).
  • Rinse the turkey and pat dry with paper towels. Place the turkey on a rack in a roasting pan.
  • In a small bowl, mix together the melted butter, rosemary, thyme, sage, salt, and pepper. Rub the herb butter all over the turkey, including under the skin and inside the cavity.
  • Roast the turkey in the preheated oven, basting every 30 minutes with the pan juices, until the internal temperature reaches 165°F (75°C), about 3 hours.
  • While the turkey is roasting, prepare the cranberry compote. In a saucepan, combine the cranberries, orange juice, sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the cranberries burst and the compote thickens. Remove from heat and let cool.
  • Once the turkey is done, remove it from the oven and let it rest for 20-30 minutes before carving.
  • Serve the herb-roasted turkey with the cranberry compote on the side. Enjoy!
