Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix together 1/4 cup parsley, 2 tablespoons dill, 2 tablespoons chives, 1/2 cup panko breadcrumbs, and 1/4 cup grated parmesan cheese.
  • Season the salmon fillets with salt and pepper, then press the herb and breadcrumb mixture onto the top of each fillet to form a crust.
  • Place the herb-crusted salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown and crispy.
  • While the salmon is baking, prepare the lemon butter sauce. In a small saucepan, melt 1/4 cup unsalted butter over medium heat. Add 2 cloves of minced garlic and cook for 1-2 minutes until fragrant.
  • Pour in 1/4 cup chicken broth and 1/4 cup fresh lemon juice. Bring the sauce to a simmer and cook for 3-4 minutes until slightly reduced.
  • Stir in the remaining 1 tablespoon of chopped parsley and season the sauce with salt and pepper to taste.
  • Once the salmon is done, transfer the fillets to serving plates and drizzle the lemon butter sauce over the top.
