Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup breadcrumbs
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/4 tsp salt
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup breadcrumbs, 2 tbsp chopped fresh parsley, 1 tbsp chopped fresh dill, 1 tsp lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Press the herb mixture onto the top of each fillet to form a crust.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
- While the salmon is baking, prepare the dill yogurt sauce. In a small bowl, mix together 1/2 cup Greek yogurt, 1 tbsp fresh dill, 1 tbsp lemon juice, 1 clove minced garlic, and 1/4 tsp salt.
- Once the salmon is done, remove it from the oven and let it rest for a few minutes. Serve the herb crusted salmon with a dollop of dill yogurt sauce on top.
