  • Lay out 4 large flour tortillas and divide the scrambled eggs evenly among them, spreading the eggs in the center of each tortilla.
  • Place a slice of ham on top of the eggs on each tortilla, followed by a few slices of ripe avocado and 2 tablespoons of shredded cheddar cheese on each tortilla.
  • Fold in the sides of each tortilla and then roll them up tightly to form a wrap.
  • Return the wraps to the skillet and cook for 1-2 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
