Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup quinoa
- 2 cups water
- 2 tablespoons sesame seeds
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- Preheat the grill to medium-high heat.
- Brush the salmon fillets with olive oil and season with salt and black pepper.
- Place the salmon fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
- In a dry skillet, toast the sesame seeds over medium heat for 2-3 minutes, or until golden brown and fragrant.
- To serve, divide the quinoa among 4 plates, top with a grilled salmon fillet, and sprinkle with toasted sesame seeds. Garnish with lemon slices.
