Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 pineapple, peeled, cored, and diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon honey
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and 1/2 teaspoon of garlic powder.
- Brush the salmon fillets with the olive oil mixture and place them on the grill. Cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks. Remove from the grill and set aside.
- In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeno, cilantro, lime juice, honey, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and 1/2 teaspoon of garlic powder. Mix well to combine.
- Serve the grilled salmon topped with the pineapple salsa. Enjoy!
