Grilled Pineapple S'mores

Ingredients
- 4 slices of fresh pineapple, 1/2 inch thick
- 8 graham cracker squares
- 4 large marshmallows
- 4 oz of dark chocolate, chopped
- 1/4 cup of shredded coconut (optional)
Instructions
- Preheat the grill to medium-high heat.
- Place the pineapple slices on the grill and cook for 2-3 minutes on each side, until grill marks appear.
- Remove the pineapple slices from the grill and set aside.
- Place 4 graham cracker squares on a plate. Top each with a piece of dark chocolate.
- Place a marshmallow on a skewer and roast it over the grill until golden brown and melted.
- Place the roasted marshmallow on top of the chocolate on each graham cracker square.
- Top each with a grilled pineapple slice and the remaining graham cracker squares to form sandwiches.
- If desired, roll the edges of the s'mores in shredded coconut for an extra tropical touch.
- Serve immediately and enjoy!
