Grilled Lemon Dill Chicken with Roasted Asparagus

Created by: Howcan Team

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound asparagus, trimmed
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon balsamic glaze

Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, 3 tablespoons lemon juice, 2 tablespoons chopped dill, 2 cloves minced garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  • While the chicken is grilling, preheat the oven to 425°F. Place the trimmed asparagus on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper, then toss to coat. Roast in the preheated oven for 12-15 minutes, or until tender but still crisp.
  • Once the chicken is done, remove it from the grill and let it rest for a few minutes. Sprinkle the asparagus with 2 tablespoons of grated Parmesan cheese and return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  • Serve the grilled lemon dill chicken with the roasted asparagus and drizzle with 1 tablespoon of balsamic glaze before serving. Enjoy!

Grilled Lemon Dill Chicken with Roasted Asparagus is a classic dish that combines the bright flavors of lemon and dill with tender grilled chicken and perfectly roasted asparagus. This dish has its roots in Mediterranean cuisine, where the use of fresh herbs and citrus is a staple. The dish has gained popularity in modern American cuisine, with many chefs and home cooks adding their own unique twists to the recipe. The key to a perfect Grilled Lemon Dill Chicken is marinating the chicken in a mixture of lemon juice, dill, and olive oil to infuse it with flavor before grilling. The asparagus is then roasted to perfection, adding a deliciously crisp and tender element to the dish. For the best version of this dish, look for restaurants that specialize in Mediterranean or American cuisine, where chefs are likely to have perfected the art of grilling and roasting. Alternatively, consider experimenting with different cooking methods, such as using a sous vide for the chicken or adding a balsamic glaze to the asparagus for a unique twist on the classic recipe.
