Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound asparagus, trimmed
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon balsamic glaze
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, 3 tablespoons lemon juice, 2 tablespoons chopped dill, 2 cloves minced garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
- While the chicken is grilling, preheat the oven to 425°F. Place the trimmed asparagus on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper, then toss to coat. Roast in the preheated oven for 12-15 minutes, or until tender but still crisp.
