Instructions

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl, combine 1 cup crumbled feta cheese, 1/2 cup chopped sun-dried tomatoes, 1/4 cup chopped Kalamata olives, 2 tablespoons chopped fresh parsley, 2 cloves minced garlic, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the feta cheese mixture, dividing it evenly among the 4 breasts. Use toothpicks to secure the openings if necessary.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
