  • 1 red bell pepper, cut into chunks

  • 4 pita bread rounds
  • 1 cup of shredded lettuce
  • 1 large tomato, diced
  • 1/2 cup of dairy-free tzatziki sauce

Instructions

  • Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
  • While the skewers are grilling, warm the pita bread rounds in the oven or on the grill for a few minutes.
  • To assemble the souvlaki, place a pita bread round on a plate and top with shredded lettuce, diced tomato, and grilled tofu and vegetable skewers.
