Ingredients
- 1 block of extra firm tofu, pressed and cut into cubes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 4 pita bread rounds
- 1 cup of shredded lettuce
- 1 large tomato, diced
- 1/2 cup of dairy-free tzatziki sauce
Instructions
- In a bowl, whisk together 1/4 cup of olive oil, 3 tablespoons of lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the tofu cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated tofu, red onion, and bell peppers onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
- While the skewers are grilling, warm the pita bread rounds in the oven or on the grill for a few minutes.
- To assemble the souvlaki, place a pita bread round on a plate and top with shredded lettuce, diced tomato, and grilled tofu and vegetable skewers.
