Ingredients
- 1 lb of boneless lamb shoulder, thinly sliced
- 1/4 cup of olive oil
- 3 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 4 pita bread rounds
- 1 cup of diced tomatoes
- 1 cup of sliced red onions
- 1 cup of shredded lettuce
- 1 cup of crumbled feta cheese
- 1 cup of tzatziki sauce
Instructions
- In a large bowl, combine the olive oil, minced garlic, dried oregano, ground cumin, paprika, salt, and pepper. Add the sliced lamb and toss to coat. Cover and refrigerate for at least 1 hour to marinate.
- Preheat a grill or grill pan over medium-high heat. Remove the lamb from the marinade and grill for 3-4 minutes on each side, or until cooked to your desired doneness. Remove from the grill and let it rest for a few minutes.
- While the lamb is resting, warm the pita bread rounds on the grill for about 1 minute on each side.
- To assemble the gyros, place a generous amount of grilled lamb onto each warm pita bread round. Top with diced tomatoes, sliced red onions, shredded lettuce, crumbled feta cheese, and a dollop of tzatziki sauce.
