Greek Chicken Pita

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into strips
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 pita bread rounds
- 1 cup diced tomatoes
- 1 cup diced cucumbers
- 1/2 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
Instructions
- In a large bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper. Add the chicken strips and toss to coat. Cover and marinate in the refrigerator for at least 1 hour.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken strips for 5-7 minutes on each side, or until fully cooked and slightly charred. Remove from the grill and let it rest for a few minutes.
- While the chicken is resting, warm the pita bread rounds on the grill for about 1 minute on each side.
- To assemble the pitas, divide the grilled chicken strips, diced tomatoes, diced cucumbers, sliced red onion, and crumbled feta cheese among the warm pita bread rounds. Drizzle with tzatziki sauce.
