Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tbsp balsamic vinegar
- 2 tbsp chopped fresh parsley
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 2 tbsp of olive oil, garlic, oregano, thyme, salt, and pepper. Brush the mixture over the cod fillets and set aside to marinate.
- In a large bowl, toss the sliced bell peppers, zucchini, and red onion with the remaining 2 tbsp of olive oil and balsamic vinegar. Season with salt and pepper to taste. Grill the vegetables for 8-10 minutes, or until tender and slightly charred. Remove from the grill and set aside.
