Greek Baked Cod with Feta Orzo and Grilled Vegetables
Created by: Howcan Team
Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tbsp balsamic vinegar
- 2 tbsp chopped fresh parsley
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 2 tbsp of olive oil, garlic, oregano, thyme, salt, and pepper. Brush the mixture over the cod fillets and set aside to marinate.
- In a large bowl, toss the sliced bell peppers, zucchini, and red onion with the remaining 2 tbsp of olive oil and balsamic vinegar. Season with salt and pepper to taste. Grill the vegetables for 8-10 minutes, or until tender and slightly charred. Remove from the grill and set aside.
- While the vegetables are grilling, preheat the oven to 400°F. Place the marinated cod fillets on a baking sheet and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- In a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain any excess liquid and stir in the cherry tomatoes and crumbled feta cheese.
- To serve, divide the feta orzo among plates, top with a baked cod fillet, and serve with the grilled vegetables. Garnish with chopped parsley and enjoy!
The Greek Baked Cod with Feta Orzo is a classic Mediterranean dish that combines the freshness of seafood with the rich flavors of feta and orzo. This dish has its roots in the coastal regions of Greece, where fresh fish is abundant and feta cheese is a staple ingredient. The cod is marinated in a blend of olive oil, lemon juice, and Mediterranean herbs, then baked to perfection. The orzo is cooked to a creamy consistency and mixed with tangy feta cheese, creating a luxurious bed for the tender cod. Grilled vegetables on the side add a smoky, charred flavor that complements the dish perfectly. In Greece, this dish is often prepared by skilled chefs in seaside tavernas, using the freshest catch of the day and locally sourced feta cheese. The combination of flavors and textures in this dish reflects the vibrant and diverse culinary traditions of the Mediterranean. For the best version of this dish today, look for restaurants that prioritize fresh, high-quality ingredients and traditional cooking methods. The key to getting this dish right lies in the quality of the cod, the creaminess of the orzo, and the bold flavors of the feta and grilled vegetables. Alternatively, some chefs also prepare a version of this dish with grilled vegetables incorporated into the orzo, adding an extra layer of complexity to the dish. Whether enjoyed in a seaside taverna in Greece or at a top-notch Mediterranean restaurant, the Greek Baked Cod with Feta Orzo and grilled vegetables is a delightful culinary experience that captures the essence of Mediterranean cuisine.
