Created by: Howcan Team
Ingredients
- 4 cod fillets (6 oz each)
- 1 cup orzo
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the cod fillets with salt and pepper, then place them in a baking dish. Drizzle with 2 tablespoons of olive oil and sprinkle with half of the chopped dill. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, cook the orzo according to package instructions. Drain and return to the pot. Stir in the remaining olive oil, feta cheese, and remaining dill. Season with salt and pepper to taste.
- In a small saucepan, heat the chicken broth over medium heat. Add the minced garlic, lemon juice, and lemon zest. Simmer for 3-4 minutes, then remove from heat and stir in the remaining dill. Season with salt and pepper to taste.
- To serve, divide the feta orzo among plates and top with a baked cod fillet. Drizzle with the lemon dill sauce and garnish with additional dill and lemon zest if desired. Enjoy!
The Greek Baked Cod with Feta Orzo is a classic Mediterranean dish that combines the freshness of seafood with the rich flavors of Greek cuisine. This dish has its roots in the coastal regions of Greece, where fresh cod is abundant and feta cheese is a staple ingredient. The lemon dill sauce adds a zesty and herbaceous element that perfectly complements the delicate flavor of the cod. Renowned chefs like Yotam Ottolenghi and Cat Cora have put their own spin on this traditional dish, incorporating their unique culinary styles and techniques. The best version of this dish can be found in seaside tavernas in Greece, where the cod is sourced locally and the feta cheese is made from sheep's milk for an authentic taste. To make the perfect Greek Baked Cod with Feta Orzo, it's crucial to use high-quality, fresh cod and to cook it just until it's tender and flaky. The orzo should be al dente and infused with the creamy richness of feta cheese. The lemon dill sauce should be bright and tangy, with a generous amount of fresh dill to elevate the flavors of the dish. For a unique twist on this classic recipe, some chefs also incorporate Kalamata olives or sun-dried tomatoes into the orzo for added depth of flavor. Whether enjoyed in a seaside taverna in Greece or prepared at home, the Greek Baked Cod with Feta Orzo is a delightful dish that captures the essence of Mediterranean cuisine.
