Ingredients
- 4 cod fillets (6 oz each)
- 1 cup orzo
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the cod fillets with salt and pepper, then place them in a baking dish. Drizzle with 2 tablespoons of olive oil and sprinkle with half of the chopped dill. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, cook the orzo according to package instructions. Drain and return to the pot. Stir in the remaining olive oil, feta cheese, and remaining dill. Season with salt and pepper to taste.
- In a small saucepan, heat the chicken broth over medium heat. Add the minced garlic, lemon juice, and lemon zest. Simmer for 3-4 minutes, then remove from heat and stir in the remaining dill. Season with salt and pepper to taste.
- To serve, divide the feta orzo among plates and top with a baked cod fillet. Drizzle with the lemon dill sauce and garnish with additional dill and lemon zest if desired. Enjoy!
