Instructions

  • In a medium bowl, whisk together 3 cups of flour, 1 teaspoon of baking soda, 1/4 teaspoon of salt, 1 tablespoon of ground ginger, 1 tablespoon of ground cinnamon, 1/2 teaspoon of ground cloves, and 1/2 teaspoon of ground nutmeg.
  • In a large bowl, using an electric mixer, beat 3/4 cup of softened butter and 3/4 cup of packed brown sugar until light and fluffy.
  • Add 1/2 cup of molasses and 1 large egg to the butter mixture, and beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one portion of the dough to 1/4 inch thickness.
  • Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are set and the cookies are firm to the touch.
  • Cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  • Repeat with the remaining dough, re-rolling scraps as needed.
  • Once cooled, decorate the cookies as desired and enjoy!
