  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of fresh ginger, minced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 carrot, julienned
  • 1/4 cup of vegetable broth
  • 2 green onions, sliced
  • Cooked rice, for serving

  • 2 green onions, sliced

Instructions

  • In a bowl, toss the cubed tofu with 1 tablespoon of soy sauce and cornstarch until evenly coated.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced ginger and garlic, and cook for 1-2 minutes until fragrant.
  • Add the bell pepper, broccoli, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Pour in the vegetable broth and remaining 1 tablespoon of soy sauce. Return the crispy tofu to the skillet and toss everything together until heated through.
  • Sprinkle with sliced green onions and serve the ginger tofu stir-fry over cooked rice. Enjoy!
