Ingredients
- 6 slices of bacon, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 large potatoes, peeled and diced
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1 teaspoon of thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onion to the pot with the bacon fat and cook until softened, about 5 minutes.

- Add the diced potatoes, chicken broth, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and cooked bacon. Season with salt and pepper to taste.
