Ingredients
- 4 bone-in, skin-on chicken thighs
- 1/4 cup grated parmesan cheese
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 lbs russet potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup grated parmesan cheese, 4 cloves of minced garlic, 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the chicken thighs on a baking sheet lined with parchment paper. Rub the garlic parmesan mixture all over the chicken, ensuring it's evenly coated.
- Roast the chicken in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
- While the chicken is roasting, place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.
- Mash the potatoes using a potato masher or fork. Add 1/2 cup of milk and 4 tablespoons of butter. Season with salt and pepper to taste. Continue mashing until smooth and creamy.
