Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss 1 head of cauliflower florets with 3 tablespoons of olive oil, 4 cloves of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until evenly coated.
  • Spread the cauliflower in a single layer on a baking sheet.
  • Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
  • Remove the cauliflower from the oven and sprinkle 1/2 cup of grated Parmesan cheese and 1 teaspoon of dried oregano over the top.
  • Return the cauliflower to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with 2 tablespoons of chopped fresh parsley before serving.
