Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss 1 lb of trimmed and halved Brussels sprouts with 2 tablespoons of olive oil, 3 cloves of minced garlic, and salt and pepper to taste.
  • Spread the Brussels sprouts in a single layer on a baking sheet.
  • Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized, stirring once halfway through.
  • Remove the Brussels sprouts from the oven and sprinkle 1/4 cup of grated Parmesan cheese over the top.
  • Return the baking sheet to the oven and roast for an additional 2-3 minutes, or until the cheese is melted and golden brown.
