Ingredients
- 8 oz of linguine pasta
- 1 lb of large shrimp, peeled and deveined
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 4 cloves of garlic, minced
- 4 tbsp of unsalted butter
- 1/4 cup of chicken broth
- 1/4 cup of grated Parmesan cheese
- 1 lemon, zested
- Salt and pepper to taste
- 2 tbsp of chopped fresh parsley
Instructions
- Cook the linguine pasta according to the package instructions. Drain and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and cook for 1 minute until fragrant.
- Add the asparagus to the skillet and sauté for 3-4 minutes until tender-crisp.
- Pour in the chicken broth and lemon zest, then bring to a simmer. Allow the liquid to reduce slightly.
- Add the cooked pasta and shrimp to the skillet. Toss everything together until well combined and heated through.
- Sprinkle with grated Parmesan cheese and chopped parsley before serving.
- Divide the garlic butter shrimp and asparagus pasta into serving plates and enjoy!
