Fruity Pebble Cheesecake with Strawberry Swirl

Ingredients
- 2 cups of fruity pebbles cereal
- 1/4 cup of unsalted butter, melted
- 24 oz of cream cheese, softened
- 1 cup of granulated sugar
- 1 tsp of vanilla extract
- 4 large eggs
- 1/2 cup of sour cream
- 1/4 cup of all-purpose flour
- 1/2 cup of strawberry puree
- Red food coloring (optional)
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a food processor, pulse 2 cups of fruity pebbles until finely ground. Add melted butter and pulse until combined. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and mix until combined. Beat in the eggs one at a time, then add the sour cream and flour. Mix until smooth.
- Pour 2/3 of the cream cheese mixture over the fruity pebble crust.
- In a small bowl, mix the strawberry puree with a few drops of red food coloring if desired. Spoon dollops of the strawberry mixture over the cream cheese layer. Use a knife to gently swirl the strawberry into the cream cheese mixture.
- Carefully pour the remaining cream cheese mixture over the strawberry swirl layer.
- Place the springform pan on a baking sheet and bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours or overnight before serving.
