Ingredients
- 2 cups of fruity pebbles
- 1/4 cup of unsalted butter, melted
- 24 oz of cream cheese, softened
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 4 large eggs
- 1/2 cup of sour cream
- 1/4 cup of all-purpose flour
- 1/2 cup of heavy cream
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a food processor, pulse 2 cups of fruity pebbles until finely ground. Add melted butter and pulse until combined.
- Press the fruity pebble mixture into the bottom of the prepared springform pan, creating an even crust. Place in the freezer to set while preparing the filling.
- In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and flour until fully combined.
- Pour the heavy cream into the cream cheese mixture and mix until smooth.
- Pour the filling over the prepared fruity pebble crust in the springform pan.
- Bake in the preheated oven for 1 hour, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, to set.
