Friends Cake with Extra Layers of Frosting

Ingredients
- 2 cups of all-purpose flour
- 1 1/2 cups of granulated sugar
- 1/2 cup of unsalted butter, softened
- 3 eggs
- 1 cup of whole milk
- 1 tablespoon of baking powder
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- For the frosting:
- 1 1/2 cups of unsalted butter, softened
- 6 cups of powdered sugar
- 1/4 cup of heavy cream
- 2 teaspoons of vanilla extract
- Food coloring (optional)
Instructions
- Preheat the oven to 350 degrees F. Grease and flour three 9-inch round cake pans.
- In a large bowl, cream together 1/2 cup of softened butter and 1 1/2 cups of granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in 1 tablespoon of baking powder and 1 teaspoon of vanilla extract.
- Mix in the flour and milk alternately, beginning and ending with the flour. Stir just until blended.
- Divide the batter evenly among the prepared pans. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
- For the frosting, in a large bowl, cream 1 1/2 cups of softened butter until smooth. Gradually beat in the powdered sugar. Mix in the vanilla extract and enough heavy cream to achieve a spreading consistency.
- If desired, add food coloring to the frosting to create different colors for each layer.
- Once the cakes are completely cooled, spread a layer of frosting on top of the first cake layer. Place the second cake layer on top and frost, then add the third cake layer and frost the top and sides of the cake with the remaining frosting.
- Decorate the cake as desired and enjoy with friends!
