Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 cup all-purpose flour
- 1 1/2 cups sliced almonds
- 1/2 cup mixed dried fruit (such as cherries, apricots, and cranberries)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a saucepan, melt 1/2 cup of unsalted butter over medium heat. Stir in 1/2 cup of granulated sugar and 1/2 cup of heavy cream. Bring to a boil and cook for 2 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in 1/4 cup of all-purpose flour, 1 1/2 cups of sliced almonds, 1/2 cup of mixed dried fruit, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt until well combined.
- Drop teaspoonfuls of the mixture onto the prepared baking sheet, leaving space between each one as they will spread during baking.
- Bake in the preheated oven for 8-10 minutes, or until the cookies are golden brown.
