Florentine cookies, also known as Florentine biscuits, originated in the Italian city of Florence. These delicate, crispy treats are made with a mixture of nuts, honey, sugar, and cream, and are often flavored with orange zest or vanilla. The batter is spooned onto a baking sheet and baked until golden and lacy. The cookies are then often dipped in chocolate for an extra indulgent touch. Renowned Florentine pastry chefs, such as the legendary Giuliano Bugialli, have perfected the art of making these delectable cookies. Today, the best versions of Florentine cookies can be found in traditional Italian bakeries and patisseries in Florence and throughout Tuscany. The key to achieving the perfect Florentine cookie lies in achieving the ideal balance of nutty, caramelized flavor and delicate, crispy texture. For a twist on the classic recipe, some chefs incorporate different types of nuts or add a hint of citrus for a refreshing note. Whether enjoyed on their own or as a sophisticated accompaniment to coffee or dessert wine, Florentine cookies continue to enchant food lovers around the world with their irresistible blend of flavors and textures.
