Ingredients
- 1 9-inch pie crust
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups whole milk
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 375 degrees F.
- Place the pie crust in a 9-inch pie dish and crimp the edges.
- In a medium saucepan, whisk together 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt.
- Gradually whisk in 2 cups of whole milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Boil for 1 minute, then remove from the heat.
- In a small bowl, whisk 4 large egg yolks. Gradually whisk in 1 cup of the hot milk mixture.
- Return the egg mixture to the saucepan and cook over medium heat, stirring constantly, for 2 minutes.
- Remove from the heat and stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until smooth.
- Pour the filling into the pie crust and smooth the top.
- Place a piece of plastic wrap directly on the surface of the filling and refrigerate for at least 4 hours, or until set.
- In a medium bowl, beat 1 cup of heavy cream and 2 tablespoons of powdered sugar until stiff peaks form.
- Spread the whipped cream over the filling and serve chilled. Enjoy!
