Instructions

  • Preheat the oven to 375 degrees F.
  • Place the pie crust in a 9-inch pie dish and crimp the edges.
  • In a medium saucepan, whisk together 1 cup of granulated sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of salt.
  • Gradually whisk in 2 cups of whole milk until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Boil for 1 minute, then remove from the heat.
  • In a small bowl, whisk 4 large egg yolks. Gradually whisk in 1 cup of the hot milk mixture.
  • Return the egg mixture to the saucepan and cook over medium heat, stirring constantly, for 2 minutes.
  • Remove from the heat and stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until smooth.
  • Pour the filling into the pie crust and smooth the top.
  • Place a piece of plastic wrap directly on the surface of the filling and refrigerate for at least 4 hours, or until set.
  • In a medium bowl, beat 1 cup of heavy cream and 2 tablespoons of powdered sugar until stiff peaks form.
