  • 8 oz of firm tofu, sliced into strips
  • 2 large whole wheat tortillas
  • 1 cup of mixed salad greens
  • 1/2 cup of shredded carrots
  • 1/4 cup of sliced red onion
  • 1/4 cup of chopped fresh cilantro
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, and a pinch of salt and pepper to create a dressing.
  • Lay out the whole wheat tortillas and spread 1/2 cup of edamame hummus on each tortilla, leaving a border around the edges.
  • Divide the mixed salad greens, shredded carrots, sliced red onion, and chopped fresh cilantro evenly between the two tortillas, placing the ingredients on top of the hummus.
  • Heat a non-stick skillet over medium heat and add the sliced tofu strips. Cook for 3-4 minutes on each side until golden brown and heated through.
  • Place the cooked tofu strips on top of the salad greens on each tortilla.
  • Drizzle the dressing over the tofu and salad greens.
  • Fold the sides of the tortillas in and then roll them up tightly, securing with toothpicks if needed.
  • Slice the wraps in half and serve immediately, or wrap in foil for a portable meal.
