Ingredients
- 1 cup of edamame hummus
- 8 oz of firm tofu, sliced into strips
- 2 large whole wheat tortillas
- 1 cup of mixed salad greens
- 1/2 cup of shredded carrots
- 1/4 cup of sliced red onion
- 1/4 cup of chopped fresh cilantro
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, and a pinch of salt and pepper to create a dressing.
- Lay out the whole wheat tortillas and spread 1/2 cup of edamame hummus on each tortilla, leaving a border around the edges.
- Divide the mixed salad greens, shredded carrots, sliced red onion, and chopped fresh cilantro evenly between the two tortillas, placing the ingredients on top of the hummus.
- Heat a non-stick skillet over medium heat and add the sliced tofu strips. Cook for 3-4 minutes on each side until golden brown and heated through.
- Place the cooked tofu strips on top of the salad greens on each tortilla.
- Drizzle the dressing over the tofu and salad greens.
- Fold the sides of the tortillas in and then roll them up tightly, securing with toothpicks if needed.
- Slice the wraps in half and serve immediately, or wrap in foil for a portable meal.
