Ingredients
- 1 cup of shelled edamame
 - 1/4 cup of tahini
 - 2 tablespoons of olive oil
 - 2 cloves of garlic, minced
 - 1/2 teaspoon of cumin
 - 1/4 teaspoon of salt
 - 1/4 teaspoon of black pepper
 - 2 whole wheat tortillas
 - 1 ripe avocado, sliced
 - 1/2 cup of mixed greens
 - 1/4 cup of diced tomatoes
 - 1/4 cup of diced red onion
 - 2 tablespoons of lemon juice
 
Instructions
- In a food processor, combine 1 cup of shelled edamame, 1/4 cup of tahini, 2 tablespoons of olive oil, 2 cloves of minced garlic, 1/2 teaspoon of cumin, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Blend until smooth and creamy.
 - Lay out 2 whole wheat tortillas and spread the edamame hummus evenly on each tortilla.
 - Place the sliced avocado, mixed greens, diced tomatoes, and diced red onion on top of the edamame hummus.
 - Drizzle 1 tablespoon of lemon juice over the fillings on each tortilla.
 - Fold the sides of the tortilla in and then roll it up tightly, tucking in the fillings as you go.
 - Slice the wraps in half and serve immediately, or wrap in foil for later. Enjoy!
