Earl Grey Pie

Ingredients
- 1 9-inch pie crust, pre-baked
- 3 tablespoons Earl Grey tea leaves
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Whipped cream and additional Earl Grey tea leaves for garnish
Instructions
- In a medium saucepan, combine 3 tablespoons of Earl Grey tea leaves, 1 1/2 cups of whole milk, and 1/2 cup of heavy cream. Heat over medium heat until just simmering, then remove from heat and let steep for 15 minutes.
- Strain the milk and cream mixture through a fine-mesh sieve into a clean saucepan, pressing on the tea leaves to extract as much liquid as possible. Discard the tea leaves.
- In a separate bowl, whisk together 1/2 cup of granulated sugar, 1/4 cup of cornstarch, 4 egg yolks, and 1/4 teaspoon of salt until smooth and pale in color.
- Gradually whisk the strained milk and cream mixture into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil. Boil for 1 minute, then remove from heat.
- Stir in 1 teaspoon of vanilla extract. Pour the filling into the pre-baked pie crust and smooth the top with a spatula. Place a piece of plastic wrap directly on the surface of the filling to prevent a skin from forming. Chill the pie in the refrigerator for at least 4 hours, or until set.
- Before serving, garnish with whipped cream and a sprinkle of Earl Grey tea leaves. Enjoy!
