Instructions

  • Preheat the oven to 375°F. Grease a 12-cup muffin tin or line with paper liners.
  • In a large bowl, whisk together 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • In a separate bowl, mix together the melted 1/2 cup of butter, 2 eggs, 1 teaspoon of vanilla extract, and 1/2 cup of milk.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for 15-18 minutes, or until the duffins are golden and a toothpick inserted into the center comes out clean.
  • While the duffins are baking, mix together 1/2 cup of sugar and 1 tablespoon of ground cinnamon in a shallow bowl.
  • Once the duffins are done, allow them to cool for a few minutes. Then, while they are still warm, roll each duffin in the cinnamon sugar mixture until coated.
  • Serve warm and enjoy!
