Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat the oven to 375°F. Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, mix together the melted 1/2 cup of butter, 2 eggs, 1 teaspoon of vanilla extract, and 1/2 cup of milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes, or until the duffins are golden and a toothpick inserted into the center comes out clean.
- While the duffins are baking, mix together 1/2 cup of sugar and 1 tablespoon of ground cinnamon in a shallow bowl.
- Once the duffins are done, allow them to cool for a few minutes. Then, while they are still warm, roll each duffin in the cinnamon sugar mixture until coated.
- Serve warm and enjoy!
