Double Chocolate Cheesecake

Ingredients
- 1 1/2 cups of chocolate cookie crumbs
- 1/4 cup of white sugar
- 1/3 cup of butter, melted
- 3 (8 ounce) packages of cream cheese, softened
- 1 cup of white sugar
- 1 teaspoon of vanilla extract
- 4 eggs
- 1/2 cup of sour cream
- 1/2 cup of semisweet chocolate chips, melted
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups of chocolate cookie crumbs, 1/4 cup of sugar, and 1/3 cup of melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat 3 packages of softened cream cheese, 1 cup of sugar, and 1 teaspoon of vanilla extract until smooth. Beat in 4 eggs one at a time. Blend in 1/2 cup of sour cream. Fold in 1/2 cup of melted semisweet chocolate chips. Pour filling over crust in the springform pan.
- Bake in the preheated oven for 55 to 60 minutes, or until the center is set. Allow to cool before removing the sides of the pan. Chill in the refrigerator for at least 4 hours before serving.
