Instructions

  • In a medium saucepan, heat 2 cups of whole milk over medium heat until it just begins to simmer. Remove from heat and set aside.
  • In a separate bowl, whisk together 1/2 cup of granulated sugar, 4 large egg yolks, 1/4 cup of cornstarch, and a pinch of salt until well combined.
  • Slowly pour the warm milk into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  • Remove from heat and stir in 1 teaspoon of vanilla extract.
  • Strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps.
  • Cover the surface of the custard with plastic wrap to prevent a skin from forming and refrigerate for at least 2 hours, or until completely chilled.
  • Once chilled, spoon the custard into serving dishes and sprinkle with ground nutmeg if desired. Serve and enjoy!
