Ingredients
- 2 large cucumbers, thinly sliced
- 4 medium tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 large cucumbers, thinly sliced, 4 medium tomatoes, diced, 1/2 red onion, thinly sliced, and 1/4 cup fresh parsley, chopped.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons red wine vinegar, 1 teaspoon honey, and salt and pepper to taste.
- Pour the dressing over the cucumber and tomato mixture and toss to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
