Ingredients
- 2 lbs of boneless, skinless chicken breasts
- 2 cans of cream of chicken soup
- 1 onion, chopped
- 4 carrots, sliced
- 4 celery stalks, sliced
- 2 cups of chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of garlic powder
- 1/2 teaspoon of black pepper
- 1 cup of frozen peas
- 1 cup of frozen corn
- 1 cup of all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of milk
- 2 tablespoons of melted butter
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the cream of chicken soup, chopped onion, sliced carrots, sliced celery, chicken broth, dried thyme, garlic powder, and black pepper to the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
- Stir in the frozen peas and corn, and continue to cook on low while preparing the dumplings.
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- Stir in the milk and melted butter until a thick batter forms.
- Drop spoonfuls of the batter onto the chicken mixture in the crockpot.
- Cover and cook on high for an additional 30-40 minutes, or until the dumplings are cooked through.
