- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes until the onion is translucent.
- Add the chopped carrots, vegetable broth, ground ginger, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the carrots are tender.

- Return the blended soup to the pot and stir in the heavy cream. Heat the soup over low heat for an additional 5 minutes, stirring occasionally.
- Taste the soup and adjust the seasoning if necessary.
- Serve the creamy carrot soup with a hint of ginger hot, garnished with a drizzle of cream or a sprinkle of chopped fresh herbs if desired.
Creamy Carrot Soup with a hint of ginger has a rich history dating back to the 18th century in France. Renowned chefs in the region, such as Marie-Antoine Carême, are credited with popularizing this velvety soup, infusing it with the subtle warmth of ginger. The dish gained popularity in the United States during the 20th century, with variations emerging in different regions. Today, the best version of this soup can be found in upscale French restaurants, where chefs meticulously blend fresh carrots, aromatic ginger, and rich cream to achieve a harmonious balance of flavors. The key to perfecting this dish lies in using high-quality, fresh ingredients and finely balancing the ginger to enhance the natural sweetness of the carrots. For a unique twist, some chefs incorporate coconut milk for a creamy, dairy-free alternative. Whether enjoyed as a starter or a light meal, this soup continues to captivate palates with its comforting and sophisticated allure.
