Ingredients
- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth

- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes until the onion is translucent.
- Add the chopped carrots, vegetable broth, ground ginger, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the carrots are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Be cautious when blending hot liquids.
- Return the blended soup to the pot and stir in the heavy cream. Heat the soup over low heat for an additional 5 minutes, stirring occasionally.
- Taste the soup and adjust the seasoning if necessary.
- Serve the creamy carrot soup with a hint of ginger hot, garnished with a drizzle of cream or a sprinkle of chopped fresh herbs if desired.
