Ingredients
- 5 pounds of live crawfish
- 8 ears of corn, shucked and halved
- 3 pounds of small red potatoes
- 2 pounds of andouille sausage, cut into 2-inch pieces
- 4 lemons, halved
- 1 cup of Cajun seasoning
- 1/2 cup of hot sauce
- 1/2 cup of salt
- 8 quarts of water
Instructions
- Fill a large pot with 8 quarts of water and bring to a boil over high heat.
- Add the Cajun seasoning, hot sauce, and salt to the boiling water.
- Squeeze the juice from the lemons into the pot and add the lemon halves.
- Add the potatoes and sausage to the pot and cook for 10 minutes.
- Add the corn to the pot and cook for an additional 5 minutes.
- Carefully add the live crawfish to the pot and cook for 5 minutes, or until they turn bright red and float to the top.
- Turn off the heat and let the crawfish and other ingredients soak in the seasoned water for 15 minutes.
- Using a slotted spoon, remove all the ingredients from the pot and transfer to a large serving platter or table lined with newspaper.
- Serve hot and enjoy the delicious crawfish boil with extra corn and potatoes!
