Instructions

  • Fill a large pot with 8 quarts of water and bring to a boil over high heat.
  • Add the Cajun seasoning, hot sauce, and salt to the boiling water.
  • Squeeze the juice from the lemons into the pot and add the lemon halves.
  • Add the potatoes and sausage to the pot and cook for 10 minutes.
  • Add the corn to the pot and cook for an additional 5 minutes.
  • Carefully add the live crawfish to the pot and cook for 5 minutes, or until they turn bright red and float to the top.
  • Turn off the heat and let the crawfish and other ingredients soak in the seasoned water for 15 minutes.
  • Using a slotted spoon, remove all the ingredients from the pot and transfer to a large serving platter or table lined with newspaper.
